Soft and delicious Waffle Cookies are easy to make with a waffle maker! Leave them plain or dip them in melted chocolate for a fun sweet treat.
Yes, you can make cookies in a waffle iron! These super cute, super simple waffle cookies start with a delicious vanilla sugar cookie dough, made with ingredients you probably already have at home.
The resulting waffle cookies are soft with a bit of chew and they smell so amazing while they’re cooking!
Technically, this is a no-bake cookie recipe! The cookies are “baked” in the waffle maker rather than the oven, which is super fun.
This waffle cookie recipe is also a great one for a really hot day when you don’t want to heat up the oven, or in a situation where you don’t have access to an oven, like camping, traveling, or in a dorm room.
If you like the idea of waffle cookies, you should also try making classic Italian Pizzelle! These cookies are made in a special cookie press that makes big, flat, crisp cookies.

- Easy to Make: This recipe comes together very quickly. The majority of the time needed is for cooking each waffle, but even though it takes time, it’s a very fun and active process.
- Unique Cookies: Making cookies in the waffle iron gives them a unique shape which will look amazing on your holiday cookie platters.
- Chocolate Dipped: While this step is technically optional, dipping the waffle cookies in chocolate or white chocolate gives you the opportunity to add toppings and decorations like sprinkles or chopped nuts.
Key Ingredients
Here is everything you need to make these easy waffle cookies, plus some details about the most important ingredients:
Complete list of ingredients with quantities and instructions is located in the recipe card below
- Butter: Unsalted butter is ideal for cooking recipes so that you can control the amount of salt in the dough. Be sure to let your butter come to room temperature before you get started mixing.
- Brown Sugar: A combination of both granulated sugar and brown sugar creates a flavorful cookie that will carmelize when cooked in the waffle iron.
- Baking Soda and Baking Powder: To give the cookies a light, soft texture.
- Eggs: Allow your eggs to come to room temperature along with the butter. Room temp eggs will create the smoothest cookie dough.
- Vanilla Extract: A good quality vanilla extract helps to enhance all of the other flavors in this recipe.
You’re also going to need a waffle iron! The best option for these cookies is a mini waffle iron, and that’s what I’m using in the photos below. Avoid using a Belgian waffle maker, as the waffles it makes are too thick for this application. A standard waffle iron works too.
How To Make Waffle Cookies
Top Tips
- Cool before adding chocolate: Let all of the waffle cookies cool down completely before you start adding melted chocolate and sprinkles to them.
- Instead of the chocolate, try giving these cookies a sprinkle of powdered sugar after they’ve cooled down. A drizzle of caramel sauce or a maple syrup glaze would also be delish!
- A Mini Waffle Maker is the best tool for cooking these. You can bake cookies with a regular-sized waffle maker, but the cookies will be thicker and have less of a waffle pattern.
- If your waffle maker is not non-stick, you will want to spray it with cooking spray before adding the cookie dough.
- Be careful. The cookies will be very hot when you take them off of the iron. Use a fork to remove them so that you don’t burn yourself.
- Have fun! Each single waffle cookie takes about two minutes in the waffle iron, so cooking the whole batch will take about an hour. Kids will enjoy helping with these, and it’s a perfect recipe for camping or traveling when you don’t have access to an oven.
How to Store Waffle Cookies
Soft waffle cookies will stay fresh for up to 3 days at room temperature in an airtight container.
You can also freeze these cookies for up to three months.
