In a medium bowl, whisk together flour, baking powder, baking soda, and salt; set aside.
In a large mixing bowl, cream the butter, granulated sugar and brown sugar until creamy. Add the eggs and vanilla and mix well.
Stir in the flour mixture until just combined.
Heat the waffle iron to medium-low. Drop 1.5-2 tablespoons of cookie dough onto the hot waffle maker plates then fold the waffle maker down and allow to cook for 1-2 minutes, or until the cookie is lightly golden. Carefully transfer to a wire rack to cool completely.
To Coat in Chocolate: Melt the chocolates in 30 second intervals in the microwave, stirring after each. Dip half the cookie in the chocolate and then place on a parchment-lined baking sheet. Sprinkle with sprinkles and place in the fridge for 10 minutes or until the chocolate is firmed up.
Notes
Cool before adding chocolate: Let all of the waffle cookies cool down completely before you start adding melted chocolate and sprinkles to them.
Instead of the chocolate, try giving these cookies a sprinkle of powdered sugar after they've cooled down. A drizzle of caramel sauce or a maple syrup glaze would also be delish!
A Mini Waffle Maker is the best tool for cooking these. You can bake cookies with a regular-sized waffle maker, but the cookies will be thicker and have less of a waffle pattern.
If your waffle maker is not non-stick, you will want to spray it with cooking spray before adding the cookie dough.
Be careful. The cookies will be very hot when you take them off of the iron. Use a fork to remove them so that you don't burn yourself.
