Preheat the oven to 350°F (180°C), and line 2 cookie sheets with parchment paper.
In a large mixing bowl, use a spatula to gently fold the cake mix, cool whip and egg together. Mix until well combined.
Use a 1 Tablespoon cookie scoop to drop dough balls into confectioners sugar, then roll to coat.
Place the sugar coated cookie dough balls on the prepared baking sheet and bake for 10 minutes in the preheated oven.
Remove from the oven and transfer to the cooling rack to cool.
Notes
Stir by hand: To avoid deflating the cool whip, you should mix these by hand rather than using a mixer. Stir for at least three minutes, or until all of the cake mix is dissolved.
The dough is sticky! Don't try to roll these cookies in balls with your hands. Scoop the dough with a cookie scoop and drop it directly in the powdered sugar.
Make perfectly round cookies: When you pull the cookies out of the oven, use a glass and swirl it around each cookie to make the edges smooth.
