Just like your favorite summer dessert, but miniature, these Fruit Pizza Cookies are soft and delicious, topped with cream cheese frosting and fresh fruit.
Preheat the oven to 350°F/180°C (160°C for a fan oven), and line a baking sheet with parchment paper or a Silpat silicone baking mat. Set aside.
In a medium mixing bowl, combine flour, baking soda, baking powder, and salt. Set aside.
In a separate mixing bowl, with a hand mixer, cream the butter and sugar until light and fluffy. Add egg, egg yolk, and vanilla extract, and beat again.
Add the flour mixture, a little at a time, mixing after each addition. If the dough gets too thick for your mixer, finish mixing the dough by hand.
Use a medium cookie scoop (2 tbsp size) to drop the dough onto the lined baking sheet, leaving two inches between each cookie.
Bake for 11-12 minutes, or until the edges are lightly golden brown.
Allow the cookies to cool on the pan for 2 minutes, then transfer to a wire rack to cool completely.
To Make the Frosting:
Cream together the cream cheese and butter on medium speed until well blended, about 2 minutes. Add in the vanilla and salt.
Add in powdered sugar one cup at a time, mixing on low until all powdered sugar is incorporated.
To Decorate the Cookies:
Spread some cream cheese over each cooled cookie, then top with pieces of fruit.
Notes
If you're using oranges, it's best to remove the membrane from each segment. Canned mandarin oranges also work perfectly here.
Cut the fruit into small pieces so that you'll be able to put multiple types of fruit on each cookie without over-topping them.
Other toppings, such as slivered almonds, shredded coconut, or sprinkles can also be added.
Be sure to let the cookies cool before frosting them. Cream cheese frosting will melt right off of warm cookies!
If you'd like to take a shortcut, feel free to make this recipe with refrigerated cookie dough. While the cookies won't be quite as good, they'll still taste great with this homemade frosting.
The cookies and frosting can be made up to 2-3 days ahead of time. Store both in separate containers in the fridge. Just before serving. Frost the cookies and add the fruit.
