½cupChips Ahoy cookiesor other crispy chocolate chip cookies, crushed
½cupwhite chocolate chips
Instructions
In a medium mixing bowl, combine flour, cream of tartar, salt, baking powder and baking soda. Use a fork to thoroughly combine. Set aside.
In a large, separate mixing bowl, cream together the butter and sugars using an electric hand or stand mixer. Mix until smooth.
Add in egg and vanilla and mix again.
Add in the dry ingredient mixture and mix until fully combined and the dough has formed. The dough will be crumbly at first. Switch to mixing by hand if need be.
Add in the blue food coloring and continue to mix by hand. Add food coloring until the desired shade of cookie monster is met.
Add the cookie crumbs and white chocolate chips and mix by hand to distribute the add-ins evenly throughout the dough.
Cover and chill for 1 hour before proceeding.
Near the end of the chill time, preheat the oven to 350 degrees and prepare a large baking sheet with parchment paper.
Use a cookie scoop to compact and scoop dough from bowl. Roll into smooth, round balls in between the palms of your hands and place dough on the baking sheet. Be sure to place cookies 2 inches apart. You will likely cook 2 sheets.
Bake cookies for 10-12 minutes.
When done, allow cookies to cool on the baking sheet for 1 minute before transferring to a cooling rack. Serve warm or at room temperature.
Notes
Use Gel Food Coloring: To get the classic Cookie Monster shade of blue, you'll need a good amount of coloring, and liquid food coloring will add too much moisture to the dough.
To Crush the Cookies, use your hands to break them into small pieces, or roughly chop them with a knife.
Add More Mix-Ins! You can also add a half cup of semi-sweet chocolate chips to this recipe, or increase the amount of cookie pieces you stir in. In total, you can add up to 2 ½ cups of add-ins to your Cookie Monster Cookies.
The Dough Will Be Thick, so you'll likely need to use your hands to finish mixing in the food coloring.
Chilling is Important. In this recipe, the dough should be cold when you put it in the oven. If it isn't, your cookies may spread too much.
Be sure to leave enough space around each cookie on the pan. The cookies will expand while baking.
Store in an airtight container at room temperature for up to 5 days, or freeze for longer storage.
