– ½ cup butter softened
– ¾ cup granulated sugar
– ½ cup plain yogurt
– 1 large egg
– 2 ½ cups all-purpose flour
– ½ teaspoon baking soda
– ½ teaspoon baking powder
– ¼ cup orange juice
– 2 teaspoons orange zest
Preheat the oven to 350°F/180°C, and line a cookie sheet with silpat or parchment paper. In a large bowl using a hand mixer, cream the butter with sugar until smooth.
Add yogurt and egg and beat again for 30 seconds. Then add the dry ingredients and mix until just combined. Add the orange juice and zest, and mix again.
Use a medium cookie scoop, scoop out cookie balls and bake for 12-14 minutes. Remove from the oven, and allow to cool on the cookie sheet for 5 minutes, then transfer to a wire rack to cool completely.
To make the icing, add powdered sugar to a bowl, then gradually add the orange juice and zest if using and mix until desired consistency. Spoon the icing over the cookies, and it will spread and cover the cookies. Garnish with extra orange zest.
