Molasses Cookies

These soft and chewy molasses cookies are a perfect blend of warming spices. Easy to make, they're an ideal addition to your Christmas baking list.

How to Make Molasses Cookies

Preheat the oven to 325°F/160°C and line 3 cookie sheets with parchment paper. In a bowl, combine the dry ingredients: flour, baking soda, salt, cinnamon, ginger, nutmeg, and cloves. Set aside.

In a separate bowl, with a hand mixer, or in a bowl of a stand mixer, cream butter with sugar until smooth and creamy. Add in the egg yolk, molasses, and vanilla extract, and beat again until well combined.

Gradually add the dry ingredients to the wet mixture. Stir until the ingredients are just combined.

Using a medium cookie scoop (1.5 tablespoon size) scoop out the dough, roll into balls, and coat in the granulated sugar. Place on the prepared cookie sheets about 2 inches apart to allow the cookies to spread as they bake.

Bake in the preheated oven for 12-13 minutes. Allow to cool on the pan for 10 minutes, then transfer to a wire rack to cool completely.
