Fruit Pizza  Cookies

Just like your favorite summer dessert, but miniature, these Fruit Pizza Cookies are soft and delicious, topped with cream cheese frosting and fresh fruit.

Sugar Cookie Ingredients

– flour – baking soda – baking powder – salt – butter – granulated sugar – egg + egg yolk  – vanilla extract

Cream Cheese Frosting Ingredients

– butter  – cream cheese  – vanilla extract – salt – powdered sugar

How to Make Fruit Pizza Cookies

Preheat the oven to 350°F/180°C, and line a baking sheet with parchment paper. In a mixing bowl, combine flour, baking soda, baking powder, and salt.

In a separate mixing bowl, with a hand mixer, cream the butter and sugar until light and fluffy. Add egg, egg yolk, and vanilla extract, and beat again.

Add the flour mixture, a little at a time, mixing after each addition. If the dough gets too thick for your mixer, finish mixing the dough by hand.

Use a medium cookie scoop (2 tbsp size) to drop the dough onto the lined baking sheet, leaving two inches between each cookie. Bake for 11-12 minutes, or until the edges are lightly golden brown.

Allow the cookies to cool on the pan for 2 minutes, then transfer to a wire rack to cool completely.

To make the frosting, cream together the cream cheese and butter on medium speed until well blended. Add in the vanilla and salt. Add in powdered sugar one cup at a time, mixing on low until all powdered sugar is incorporated.

To decorate the cookies, spread some cream cheese over each cooled cookie.

Then top with your choices of fruit and enjoy!
