How to Make Chocolate Chip Cookies Without Brown Sugar

Preheat the oven to 350°F/180°C, or 160°C fan oven. Prepare a cookie sheet by lining it with parchment paper or silicone mat and set aside.

In a bowl of a stand mixer fitted with the paddle attachment, cream the butter with the sugar until smooth, light in color and creamy (2-3 minutes).

In a large mixing bowl, beat butter and sugar together until light and fluffy. Add vanilla and eggs one at a time mixing until the eggs are incorporated but don’t overwhip.

Add in the flour, baking soda, and salt and mix again until just combined. Scrape the sides with a spatula so no dry flour is left and the dough is uniform. Fold in the chocolate chips with a spatula so they’re evenly distributed.

Using a small tablespoon size cookie scoop, scoop the dough and place it on the prepared cookie sheets.

If desired, add 3-4 extra chocolate chips on top of each cookie. Bake for 8-10 minutes or until the edges start to brown. Remove from the oven, allow to cool on the cookie sheet for 5 minutes then transfer to a wire rack to cool completely.
