- Butter: I’m using salted butter in this recipe as a slight shortcut. You’ll want softened butter for the cookie dough, and the butter for the brownies will be melted with chocolate chips in the microwave.
- Brown Sugar: This is the key ingredient in making chocolate chip cookie dough that tastes warm and caramel-like.
- Cornstarch: If you’ve never added cornstarch to cookie dough before, you’ll be glad to know that this ingredient makes chocolate chip cookies extra soft!
- Chocolate Chips: You’ll need this for the chocolate chip cookie dough and the brownie batter. Semi-sweet chocolate chips are perfect.
- Cocoa Powder: The brownie layer for Oreo Brookies has a double dose of chocolate from cocoa powder and melted chocolate.
- Oreos: Regular Oreo Cookies create the perfect center layer in these Oreo stuffed brownies/cookies. Feel free to use Double Stuff too.

- Prepare your brownie pan. Be sure to grease the pan well with cooking spray. For extra ease in removing the brookies once they’ve cooled, I suggest adding a layer of parchment paper as well.
- Try different cookies. Regular Oreos are classic, but Nabisco makes all sorts of tasty Oreo flavors that you can add to this recipe. Try making brookies with Mint Oreo, Chocolate Oreo, or Peanut Butter Oreo!
- Don’t overmix. This is true for both the chocolate chip cookie dough and the brownie batter. Only mix in the flour until you can’t see it anymore. The brownie batter may look a little bit lumpy, and that’s totally ok.
- Let them cool. For neatly sliced brookie squares, it’s important to let the bars cool down completely before slicing them. You can chill the pan briefly in the refrigerator to make cutting even easier.
- Optional Toppings: A drizzle of melted chocolate and some extra crushed Oreo cookies make these bars look beautiful!
How to Store Brookies
These bars will stay fresh in an airtight container for up to 3 days. If you aren’t going to eat them right away, it’s best to leave them uncut. This will help to keep the edges from drying out.

I’d suggest using a box mix designed for a 9×9-inch pan, as the larger, “family size” box might be a bit too much batter.
How Do I Make This Recipe Gluten Free?
While I have not tested this recipe specifically, most baking recipes will work really well if you replace the all purpose flour with a gluten-free flour blend designed to be substituted 1:1. Bob’s Red Mill Gluten Free Baking Flour is a great option to try.
