I love easy no-bake treats, and these haystacks are a favorite! They take just a few minutes to throw together, then you just decorate and wait for them to set and harden. They look pretty on a cookie tray and taste good too. You will also love the crunch of the chow mein noodles, just make sure that you use unflavored ones.

- Cookie Scoop: This scoop is a small size, and makes one tablespoon sized scoops, perfect for most drop cookie recipes. I suggest keeping a medium cookie scoop on hand as well.

- White Almond Bark or Chocolate: Use a good quality bar of white almond bark or white chocolate. Keep in mind that almond bark is easier to work with, you can easily melt it in the microwave and it sets beautifully. White chocolate has a different flavor and requires tempering, I prefer to melt white chocolate over a double boiler.
- Chow Mein Noodles: These noodles are crunchy and made with gluten. You can find them in the Asian section at the grocery store, just make sure that you get the plain unflavored ones. The most popular brand of chow mein noodles is LaChoy.
- Food Coloring and Sprinkles: To make your haystacks holiday-themed, add a few drops of green food coloring until you reach the desired color (it should be bright!), then decorate with holiday sprinkles.
How To Make Haystack Cookies
- Line 2 half size cookie sheets with parchment paper, and set aside.
- Melt white almond bark in a microwave-safe bowl in 30-second intervals until melted stirring in between.
- To the melted bark, add a few drops of food coloring and stir until you reach the desired color.
- Stir in chow mein noodles until they’re well coated, then drop rounded spoonfuls on a lined baking sheet and decorate with sprinkles.
- Allow the cookies to set at room temperature for 2-3 hours or overnight to firm up.
TIP: To speed up the hardening process, pop the treats in the fridge or freezer for half an hour or until they set completely.
Top Tips
- Grinch Haystacks. Want to make Grinch themed haystacks? Decorate with jumbo heart sprinkles!
- Smaller Cookies. You can make these candies as small or large as you want! I made 16 large haystack cookies, but you can easily make 32 smaller ones.
- Can’t Find Chow Mein Noodles? You can substitute with small pretzels, or stick pretzels broken up into smaller pieces, crispy cereal, or shoestring chips.
- Use Other Decorations. Have fun with the decorations, add mini marshmallows, broken pretzels, dried fruit, or holiday M&M’s.

Storing
Store your haystack cookies in an airtight container for up to three days. You can keep them at room temperature, but if it’s warm in your home you might want to refrigerate them.
You can also freeze haystacks in a freezer bag for 1-2 months.
