- Semisweet Chocolate: For the melted chocolate that goes into the cookie dough, I’m using a high quality semi-sweet chocolate bar, cut into chunks. Bar chocolate melts better than chocolate chips do, and has a smoother texture.
- Cocoa Powder: Unsweetened cocoa powder is the next layer of rich chocolate flavor that goes into these fudgy cookies.
- Chocolate Chips: More chocolate! Semi-sweet chocolate chips give these cookies pockets of pure chocolate in every single bite.
- Sugar: To keep these cookies soft and moist, we’ll use both granulated sugar and brown sugar.
- Butter: Unsalted butter is your best choice for baking, since you can control exactly how much salt goes into your recipe. There’s no need to soften the butter, we’ll be melting it.
- Eggs: One of my favorite baking tips is to let the eggs come to room temperature before baking with them. Cold eggs won’t mix into the batter evenly.
How To Make The Best Chocolate Fudge Cookies
Top Tips
- Chill the dough thoroughly. This cookie dough will be wet and very sticky when you’re finished mixing it. Chilling will allow the butter to solidify again and make the dough easy to handle.
- Don’t overmix the dough. Overmixed chocolate cookie dough can lead to tough, dry cookies. Stir the flour into the wet ingredients until you can’t see any dry streaks anymore, then stop!
- Don’t overbake. It’s hard to tell when chocolate cookies are done because you won’t necessarily see them brown or turn golden. Instead, look for the outer edges of the cookies to be dry, and the tops to be just barely set. The center of the cookies will finish cooking while the cookies cool.
- Add extras: This recipe calls for 1 cup of chocolate chips. You can use just a half cup of chocolate chips and a half cup of just about anything else! Try these with walnuts, white chocolate chips, or chopped peanut butter cups.
- Try some sea salt: A sprinkle of flaky sea salt added to the top of these cookies as soon as they come out of the oven would be divine!

You have leftovers? I’m shocked! But you can store them in an airtight container at room temperature for up to 1 week.
If they should dry out, try placing a slice of white bread or a flour tortilla in the container overnight. The cookies should magically soften again!

Can These Cookies Be Frozen?
Yes! Chocolate fudge cookies freeze really well. Keep them in a freezer bag or a freezer safe airtight container for up to 3 months. Allow them to thaw out before enjoying.
Why Do I Need to Chill the Cookie Dough?
Similarly to crinkle cookies, this cookie dough is made with melted butter. This makes the recipe super simple to mix up, but it does require chilling.
That melted butter needs to be chilled in order to solidify again. If you try to bake these cookies before the dough is chilled, they will spread way too much.
Can I Make Substitutions?
I have not tested this recipe with vegan or gluten free substitutes, but there are many excellent products on the market that should help you to adjust this recipe if needed. Try it with 1:1 gluten-free flour or vegan butter. The milk can be replaced with any type of dairy free milk as well.
